That’s a frequent refrain around here on Saturday. Usually I have no idea, just like today. But I rummaged around in the fridge and came up with a PAT sandwich: home cured pancetta, arugula and tomato. Tomatoes are one of those out of season things I still buy. The heirloom ones from Mexico are actually quite good, but today I only had a California hot house one. So, I sliced it, sprinkled with salt & pepper and drizzled a little balsamic vinegar on the slice and broiled them. On seeded wheat toast with some mayo, it was delicious.
